Hard to pick, there have been so many through the 50's, 60's, 70's, 80's, and on. But whenever anybody mentions guitar solos the first one I always think of is "Eruption" - Eddie Van Halen.
But I could name a hundred other favorites, there have been so many great guitarists...

But, why exclude Paul Kossoff, Joe Bonanmassa (here 5:08 in https://www.youtube.com/watch?v=F1_6yCHnSI4 ), Eddie Van Halen, Steve Vai, Stevie Ray Vaughan and all the rest. It's got to depend on what mood you are in, hasn't it?
Yup, all of those, and Ace Frehley, Slash, Santana, Billy Gibbons, Brian May, and dozens more have done some great solos.
Always thought it would have been cool to have about 20-30 of them in a 'lead only' on-stage guitarist battle. A call-response type of thing...
I still think the outro solo to Fade to Black is my favourite solo. I just can't play it. GuitarStarTV has made three videos for me so far, but I'm stuck on video two. Videos one and three I'm fine with. I just don't have speed as a guitar skill it seems. If you haven't seen these awesome tutorials, then have a look.

The solo from Little Wing, by Hendrix does touch a lot of spots, though......... well, all of it, really.... 8)

That's the first video I recall seeing a camera mounted to a guitar headstock. I still love that run down the neck he does. The solo begins at 2 minutes 30 seconds by the way.
